Peri Peri Chicken

Peri Peri is a type of chili belonging to the family of capsicums, a chili pepper that grows both wild and as a crop (wikipedia). It is also known as African Bird’s Eye Chili or the Scotch bonnet pepper It’s extremely spicy and a yummy treat for all the spice lovers.

Since the theme for this month’s MFBC was to choose a recipe from an amazing blog –Afelia’s Kitchen, I settled on trying out her Peri Peri Chicken. I marinated the chicken a night before so the flavours were beautifully taken in by the chicken. No matter the level of spiciness in this recipe, it is just delicious. I could literally have the whole chicken by myself (no kidding!).

So if you are up for the spice game, I highly recommend you try this out. I am sure this recipe will find its way in your regular menu just as it did in my home.

Ingredients:

1 chicken (cut into half or 4 pieces)

1/2 onion

3 cloves garlic

1/4 cup olive oil

2 tbsp lemon juice

2 tbsp white vinegar

1 tsp salt

1/2 tsp kashmiri red chili powder

1/2 tsp paprika powder

1/2 tsp coarse black pepper powder

1/4 tsp red + yellow food color

1 scotch bonnet pepper

Method

Take all the above ingredients in a blender and blend well.

Marinate the chicken ensuing that you cover both the sides well. Leave the marinate at least 2 hours (preferably overnight).

Cook in an oven at 400 deg F for about 35 – 40 minutes till the chicken is roasted well and has a browned color on top. Turn over the other side and roast here as well.

Enjoy this delicious and spicy chicken!
