Watermelon is perhaps one of the most amazing fruits. One, it fills you up and second, it quenches your thirst. Especially when you live in the Emirates, where the temperature is just soaring high and high, watermelon provides you the goodness by calming you down and cooling your body.
The other day, I was just thinking of recipes to make with watermelons. I was getting kinda bored with just eating them or having them as a juice. Since I have a long few months to enjoy this fruit, I knew I have to make some experiments with using them. I quickly whipped up a yummy creamy watermelon dessert. It was just delicious. I already had all the ingredients at home, so it was very easy to make this. The only difficult part is to wait till it sets in the refrigerator. Before you try it out, let me tell you, this one is going to be one of your favorites so be prepared to devour it till the last bite.
1 packet strawberry jelly
500ml whipping cream
4 cups watermelon, deseeded and chopped
250ml vanilla ice cream
Prepare the strawberry jelly as written on the packet instructions. Pour on a setting tray and allow it to harden.
Prepare the gelatin as written on the packet instruction.
In a large bowl, take whipping cream and using an electric hand mixer, whip on a high speed till soft peaks appear. Add the chopped watermelon and ice cream. Beat well. Add in the gelatin when it is slightly cooled. Mix well.
Pour over the jelly layer and allow it to cool in the refrigerator. It requires at least 2-3 hours to set firmly.
