Medu Vada / Spicy Indian Doughnuts

Indian snacks never fail to impress me. Whether it be the spicy chaats or the fried little treats, they always leave a lingering taste on my tastebuds. One such amazing snack, that will instantly bring out the hungry person in you is this delicious Medu Vada.

Also called the spicy doughnut, these fried snacks are yummy and filling. Though it requires a little preparation in advance but it’s taste will make you fall in love with every bit of it. Tough there are recipes to make this in an instant, I prefer the fermentation method as these yield crispy and fluffy vadas just like you find in restaurants. Try out these spicy Indian doughnuts, popularly called Uddin Vada or Medu Vada in South India, and relish it’s amazing flavors. This can be served for brunch or an evening snack.




2 cups urad dal ( soaked for at least 6 hours or overnight)
1/2 cup long grained rice ( soaked for at least 6 hours or overnight)
1 tsp cumin seeds
1 onion, chopped
3 tbsp curry leaves, chopped
1 green chili, finely chopped
Salt to taste
Oil for frying


Grind soaked urad dal and rice with required salt and cumin seeds. Use very little water while grinding. The mix should be in semi solid form.

Transfer to a bowl and allow it to ferment for another 5-6 hours. Keep covered in a warm place. ( This is absolutely necessary so don’t skip this step)

Add chopped onions, chili and curry leaves and mix well.

Heat oil in a thick bottomed pan. Make rings of the Vada dough and fry till golden brown.

Serve hot with chutney or sambar.
