The next Indian gravy in the basic Indian gravies of the Homemaking Skills Series is the yellow gravy. This is highly versatile and can be used in making a wide variety of curries. The flavour of cashew nut and yoghurt gives a unique flavour to the gravy.
3 large onions
2 tbsp ginger garlic paste
1/2 cup tomato puree
1/2 cup yoghurt
1/2 tsp cumin seeds
1/2 cup cashews
2 tbsp melon seeds
3 tbsp green chili paste
1/2 tsp turmeric powder
1/2 tsp Garam masala powder
salt to taste
Make a paste of cashews and melon seeds and keep aside.
Heat oil in a pan. Add cumin seeds, cardamom and cinnamon.
Add onions and cook till transparent.
Add ginger garlic paste and sauté for 2 mins. Add tomato puree, green chili paste and mix well.
Add turmeric powder, Garam masala powder and salt. Add cashew and melon seeds paste and mix well. Add yoghurt and mix.
Allow it to cool. Blend into a fine paste.
Use as required.
