Day 40 – Basic Indian Gravies – Green Gravy

The green color in this gravy comes from spinach, a highly nutritious green leafy vegetable. This basic gravy can be used to make a large variety of other gravies like palak paneer, aloo palak and palak chicken. It tastes delicious and can be stored in the freezer for later use. This is also called the Hariyali gravy.


2 bunch spinach, blanched

2 large onions, chopped

1 green chili

2 medium tomatoes, chopped

1 tbsp ginger garlic paste

1/2 tsp coriander powder

1/2 tsp Garam masala powder

1 tsp red chili powder

salt to taste

3 tbsp oil


Make a paste of blanched spinach and green chili.

Heat oil in a pan. Add chopped onions and cook till light brown. Add ginger garlic paste and sauté for a while. Add chopped tomatoes and cook till soft. Add coriander powder, red chili powder and Garam masala powder. Add salt and spinach puree. Mix well.

( You can either blend the onion – tomato before adding the spinach puree and let it be as it is)

Add your preferred vegetables and serve hot.
