Last week, I organized a dinner party for some of my friends. Macaroni was one the items in the menu. Unfortunately some of them couldn’t make it. But I had already cooked the macaroni in a large batch. I knew I had to do something with it, I’m strictly against wasting of food. So I stored them in the fridge for the meantime, ransacking my brain for ideas. I googled a bit and found the combination of macaroni and cheese very tempting ( after all, I am a big lover of mac and cheese). The next day I prepared these cutlets, and they were so yummy that I decided to make it one of the regulars.
2 cups cooked macaroni
3/4 cup mozzarella cheese, grated
1 small potato, boiled
1 tsp red chili powder
1/2 tsp cumin powder
1/2 tsp chat masala
A pinch of dry mango powder
Salt to taste
1 tbsp coriander leaves, chopped
2 cups bread crumbs
Oil ( for frying)
Mix all the ingredients along with half of the bread crumbs. Make small cutlets and roll it in the remaining crumbs.
Heat oil in a pan and deep fry till brown.
Serve hot with ketchup or chutney.
